The reason your herbs get limp is due to transpiration. As a live plant soaks water up its stem, it delivers water to the leaves. The leaves in turn transform sunlight into sugars and the plant grows. Excess water transpires out the leaves and evaporates, it’s like sweating but for plants. Once cut, the plant no longer has access to water, so as it transpires it dehydrates. Using the wicking nature of the stem to deliver fresh water to the leaves will maintain the integrity of your herbs.
