Trim stems and place herbs in a glass with 1 in of water. Cover glass loosely with a plastic bag and refrigerate. Change water daily.

To dry herbs, tie the stems into bundles and hang indoors in an area with low humidity and good air circulation. The time that it takes for air-drying to fully dehydrate herbs will vary greatly. Herbs are dry when they crumble when touched. 

Mix 1 tbsp. chopped herb leaves with 1-2 tbsp. olive oil. Freeze. Use within 3-6 months.
