Sneaking Veggies into your Family’s Meals

I love to add shredded carrots, cabbage (of all sorts), zucchini and broccoli stems into wraps, casseroles, and soups even though recipes don’t always call for them. There are so many ways we can trick our families and ourselves into eating more vegetables without added whining. Did you know vegetables are one of the most wasted foods in the U.S.? Go figure!


I rummage through my refrigerator whenever I make a soup or casserole and power them up with additional vegetables, either fresh or leftovers from another meal (hint: the smaller the pieces the less likely they’ll notice). If you have super picky eaters, start with something that can camouflage the veggies like lasagna. When they do notice, you can say, “Oh, I’ve been putting that in all along and you never noticed.”
