Persimmons will continue to ripen after harvested. It is best to store them at room temperature. Ripe persimmons are best eaten immediately, but you can refrigerate them for 1 or 2 days. Keep refrigerated persimmons unwashed in a plastic bag.

It's okay to harvest unripe persimmons, they will keep in the refrigerator for up to one month.

Select orange-colored, soft-ripe persimmons. Sort, wash, peel and cut into sections. Press fruit through a sieve to make a purée. For a better product, to each quart of purée add 1/8 teaspoon (375 mg) ascorbic acid. Purée made from native varieties needs no sugar. Pack unsweetened purée into containers. Leave headspace. Seal and freeze.
