Refrigerate in original packaging on the lowest shelf of the refrigerator. If there is a chance of dripping, store on a tray. Cook within 1-2 for peak quality, good for 3-5 days.
Product dating is not required by federal regulations, many stores and processors voluntarily date packages of fresh or uncooked meat and poultry products. Frozen meat is good for up to 12 months if (kept at 0 °F). If freezer burnt, cut out those areas and discard. Bones can be used to make stock.
Freeze meat within 3-5 days of purchase. Divide meat into meal-size portions. Wrap meat in 1-2 layers of freezer paper or heavy-duty foil and place in freezer bag.
