Remove leaves and blemishes before storing in your high-humidity crisper drawer. Wash just before using.
Trim away parts that are going brown. Put cauliflower in ice water, drain, and then put back in refrigerator.
Trim. Separate into individual pieces. Cut stalk lengthwise. Rinse and drain. Blanch, cool promptly, drain, package, leaving no headspace and freeze.
